Most papad on supermarket shelves is made on a factory line — machine-rolled, chemically dried, and produced with shelf life as the top priority. Traditional papad is dried slowly in open sunlight over one to two days. This slower process develops a texture and flavour that fast, heat-forced drying can't replicate — the difference shows the moment it hits hot oil or a tawa.
Homemade batches use whole lentil flour, natural spices, and salt — no preservatives, no anti-caking agents, no artificial flavour enhancers. What's on the label is what's actually in the papad.
